I noticed a lot of the white base cards aren't in the checklist for series 1 or 2. Like the johnny Cueto one. It says sold out. Does that effect things. I'm new and am just trying to learn the game.

If a base series player/card is reclassified as a sold out then they remove it from the checklist for the collection reward. You can of coarse try to collect the entire set, by trading for the sold out ones. There's really no advantage in doing so unless you want them for your own collection. In addition there might be a final release of remaining players, but it is getting late in the season so it's becoming less likely.
